Buffalo Wing Hummus
Exciting news up in here!  For the month of September I became a sponsor for one of my all time favorite websites, Emily Bites! For the entire month a link to my blog will be shown on the left hand side of her page.  I’m pretty excited about supporting such a fantastic blog and person.  
So, I thought I better share this fantastic Emily Bites recipe with you all (y’all, if you will). Last night I went grocery shopping in preparation for the long weekend.  I got lots of healthy snacks and the fixings for three yummy and healthy meals.  I’m pretty excited to try out some new recipes this weekend!  
Lately I have been totally obsessed with hummus.  Like, head over heels in love with it.  And when I was browsing through Emily’s Recipe Index I discovered a recipe that combines two of my loves, buffalo wings and hummus.  Jackpot!  So I bought the ingredients for a double batch on weekend grocery trip. 
Let me tell you.  This recipe is simply wonderful. Check out the recipe HERE.  It was so easy to throw together, plus it gave me an excuse to use my awesome food processor that I rarely get to use.  It literally took like 10 minutes start to finish.  How awesome is that?! 
And the taste is awesome.  The buffalo wing flavor has a nice bite but isn’t overwhelmingly spicy. The texture is fantastic. I’m pretty sure I will never buy store-bought hummus again! And I’m really glad I made the double batch because this will last me all weekend!
I enjoyed it with carrot chips and sugar snap peas last night but I also have some Baked Tostitos at home that will be great as well.
Points wise this was much better than store-bought hummus. A quarter cup is only 2 PP!  That is about half of what most hummus “cost.”

Dinner from last night!  It was so tasty!  I made it into a wrap with reduced fat Mexican blend cheese and some ranch dressing.  I had leftovers for lunch and I also added lettuce.  For dinner I served it with an arugula/goat cheese/lemon juice salad and some lemon water.  Yum-o!
I will say, it looks pretty gross.  But it was really tasty.  Had a nice bite to it and lots of flavor.

Salad: 5PP
Total: 17PP

Dinner from last night!  It was so tasty!  I made it into a wrap with reduced fat Mexican blend cheese and some ranch dressing.  I had leftovers for lunch and I also added lettuce.  For dinner I served it with an arugula/goat cheese/lemon juice salad and some lemon water.  Yum-o!
