So last night I had dinner out with my girlfriends.  We went to a delicious Mexican restaurant out in the suburbs.  Knowing weigh in was the following morning, I was very aware of what I was eating. I’m pretty happy with what I had and even splurged on a small cinnamon gelato afterwards!  
I had two chicken tacos on corn tortillas with just lettuce and tomato.  On the side I had rice and black beans.  I did my best to estimate the quantities and I guessed that the meal (minus the gelato) was 20 PP.

I wanted tacos tonight but I didn’t want to really cook anything. I’ve had a long couple of days do I wanted to take it easy tonight in the kitchen. So I made “Lazy Man Tacos.” I had a few extra points for dinner tonight so I decided to use them. I made two tacos and was completely full.

- 4 corn tortillas- 1 c fat free refried beans- 1/2 c reduced fat Mexican blend cheese- 1/3 c guacamole- 4 T fat free sour cream- 2 T salsa- 30g Baked Tostitos

This was so delicious! I heated up the beans separately and the split them up on the tortillas. I put the cheese on and then microwaved it to melt it together. I topped them with guacamole, sour cream and salsa. And I had a side of baked tortilla chips. So yummy!
And I would like to point out that I measured and weighed absolutely everything! The scale is a fantastic tool and super helpful for exact measurements. If you don’t currently have one, I HIGHLY recommend it. So that was it!

Guys. It was WONDERFUL!!!

No really! It was heaven!

Ok, let’s break it down. 

Two low fat tortillas, one cup refried beans, 3/4 cup reduced fat Mexican cheese, olive oil, 1/4 cup guacamole, one serving baked tostitos, 1/4 cup fat free sour cream, salsa. 

It was a bit points heavy coming in at 23PP. But I think the next time I would use less beans and cheese and cut back by about 2PP.  Also, I could use smaller tortillas for a lighter meal. 

I really enjoyed this because even though it’s meatless, I still felt full and satisfied. Also, it was super quick! Which is always good. I could also use chicken, but that would take longer to cook. 

Also, thanks to a great tumblr (I’ll post link tomorrow when I get on an actual comp) I think I may have found my new favorite dessert. Check back later for pics and details!
