Crockpot Chicken Tacos AND Chicken Taco Soup
Who doesn’t love a good twofer?  Not me!  I’m all for getting more for less.  In this case, I was able to cook one meal that made 1.5 meals.  Can’t beat that! 
Last week I dumped some chicken breasts, a taco seasoning packet, and a jar of salsa into a crockpot in the morning.  Let it cook on low for 8 hours and came home to a house smelling of Mexican goodness!  I shredded up the chicken and we had a fantastic, low point, and healthy meal! Jeremiah and I both loved it.  (That is the top picture up there, by the way.) After that delicious meal, I put two cups of the chicken into a ziplock baggie and popped it into the freezer.
This week, because we weren’t really digging the idea of having chicken taco anything two days in a row last week, we had the soup!  We pulled the ziplock out of the freezer and defrosted it before putting it into a large soup pot.  And then we added in a whole bunch of delicious ingredients including: tomatoes, corn, onion, beans, lime juice, chicken broth and lots of yummy spices.  You should check out the recipe HERE for all of the important recipe info.  It was incredibly easy and super delicious.  And guess what?  The soup (without cheese or tortillas) comes out to only THREE PP per 1 cup serving!  THREEEEE!  Talk about amazing!  
Jeremiah and I both loved it with some low fat cheese and some tortillas on the side.  It would also be great with some tortilla chips crunched up inside.  It made a large quantity and we were able to set aside leftovers for today and then a few more servings to freeze!  I’m totally hooked on this meal.
