Last night’s dinner was really delicious! I had planned to make a completely different meal, but when there was not a single chicken breast for sale at our local grocery store, we had to change plans. So burgers it was! Chipotle black bean burger for me, and beef burger for Jeremiah.
While it doesn’t look like anything particularly interesting, that burger is actually hiding a lot of really delicious flavors. First, the burger itsef has chipotle seasonings so its really flavorful. I decided to add some more flavor by spreading some Franks Red Hot Buffalo Sauce on the bun. It added a really nice heat to the sandwich. Add in half of an avocado and a slice of 2% provolone and it was a really fantastic combination of flavors!
While there was no chicken, I was still able to get lots of other delicious and healthy food on our weekly shopping trip. I was really looking forward to asparagus and was pumped to find it on sale! I had never grilled asparagus before so I immediately called my dad to find out how to do it. Unfortunately, he didn’t pick up the phone. Neither did my mom. Sooooo…. to Google I went. They suggested making a foil pouch to grill it, so that is what we did. I spray the stalks with some olive oil, added some salt and pepper, a little lemon juice and some minced garlic. Turns out (he finally called me back an hour after we finished eating) my dad usually puts it straight on the grill and that is how he gets it so crispy (the way I like it!). The pouch just steams it. So, it was still really good, but next time I will be grilling it directly to get the crispy bits.
As another side, I made a batch of Parmesan couscous. Couscous is literally the easiest and quickest side dish to make. It take about 7 minutes from start to finish! Its really flavorful and super filling. I highly recommend it if you haven’t tried it.
So there you go, a fantastic meal that we had ready to go in literally 20 minutes.
