Honey Lime Chicken Skewers with Grilled Cherry Tomatoes and Avocado
Ok people, like I said last night, this meal was seriously ah-mah-zing (imagine Penny from Happy Endings saying it) No really, it was.  And I was a GRILL MASTER!  This was my first time grilling solo since my husband is away on “Man Trip 2012.” 
Yesterday morning I whipped up the Honey Lime marinade in like 3 minutes.  No joke, 3 minutes.  Check out the super easy recipe HERE!  Then I cut up the chicken into skewer size pieces and popped them into a ziplock bag.  Dumped in the marinade and let it chill in the fridge while I was at work.  
When I got home from work I put the chicken onto the skewers and got them on the hot grill.  While they started to cook I also make a skewer o’ cherry tomatoes and found a leftover half of avocado.  Right about the time I flipped the chicken skewers, I added the tomatoes and avocado.  The whole meal was ready from start to finish in about 20 minutes! Add a squeeze of fresh lime juice, and voila! 
You guys, I can’t tell you enough how much I love grilled avocado.  I made it a while back on my george forman (because we didn’t have a grill at our old apartment) and it pretty darn good.  I kind of forgot how great it was until recently.  This time I didn’t even put the oil or seasonings on it and it was just as wonderful.  I filled the pit hole with some salsa and ate it straight from the skin.  Delish!  
Here is the best part: this whole meal was only 8 P+.  For real, I ain’t lying.  8!  Later on I had two gorgeous plums for dessert and they were perfection.
I’m loving summer food!!
