I was craving comfort food today. So I decided to make some but lightened up. I made chicken meatloaf (I was planning on turkey but my store was out, so chicken it is!) I used THIS recipe which I had made before. SO good!
I also made them in cupcake pans. My husband doesn’t like meatloaf of any kind so I knew I would have leftovers. I figured it would be much easier to freeze or bring leftovers to work tomorrow in individual portions. It ended up making 7 full cupcakes which came to about 4 PP a piece.
As a side dish I wanted mashed potatoes. But I get home from work at 7.30 there was no way I would have time to make real mashed potatoes so I bought the flaky instant kind instead. I hadn’t ever made them before and try weren’t bad! At 2PP a serving, they weren’t bad in points either! Add in some green beans, and I’d call this a rounded meal!
